This year I thought it would be fun to learn all I can about blogging and running an online spot. It seemed like a good idea at the time and it is a blast! Today is day 4 of my Blogging 101 class here on WordPress.com. I am really enjoying the course a great deal and it has stretched my computer skills! Today’s quest was to identify my audience.
I started writing this blog for my family, my friends, and myself. I really haven’t thought about a target audience until this course. My grandmother suggested to me that I write about learning to cook for someone with food allergies. So here it goes!
If you are someone who cooks for other people, you know that cooking for everyone’s taste preferences and needs can be overwhelming. I pretty much like anything and everything (except blue cheese and raw onion ;P) But my sweetie is allergic to almost anything and everything. Learning to cook with very limited ingredients was hard at first, but I decided just because we can’t eat grilled peaches or have apple pie doesn’t mean we are going to suffer!
For the next week I am going to publish one meal (main, veg, and dessert) every day that my sweetie can eat with little affect on his allergies. The trick is Everything in Moderation. A little dairy is ok, but not a meal drenched in it; a little fruit is ok, but only the right kind prepared correctly; baked goods are ok, but not if any raw flour is present…. the list goes on.
Tonight we are having a roast chicken, buttery garlic pasta, and sautéed peas, followed by Chocolate Cinnamon Cookies No suffering tonight!
Mrs Kearin's Roast Chicken
INGREDIENTS:
- 1 (1.5 kg) whole chicken, thawed
- 1 tbs olive oil
- 1 tsp Schwartz Italian Herb Seasoning
- 1 pinch each salt and pepper
DIRECTIONS:
- Preheat oven to 190° C. Line a roasting pan with foil.
- Place chicken in pan and rub the olive oil over the chicken evenly. Sprinkle salt, pepper, and herbs over the chicken and place in oven.
- Bake for 1h 20- 30 mins. Until done.
Great post. New member to family has many really serious allergies so I might be picking your brains when I run out of ideas. She only visits every few weeks so it’s not urgent! I do love a challenge. She is very limited as to what she can eat and I am equally restricted as I cook only vegetarian.

Wow! Quite a major life change in a short time. I love your photos in your post “The First Three Months in Pictures”. My wife and I have always wanted to visit Britain (she has distant relatives in England and Scotland, and my mother was the only child of nine to be born in the U.S.A.; others in England and Canada), but never had the opportunity. I hope you continue to enjoy it.
