I know it isn’t really pumpkin season anymore, but this week I have just been in a pumpkin mood. This morning I thought french toast sounded awfully nice and pumpkin also sounded good so this is what I came up with 🙂
Pumpkin Pie French Toast
- 2 eggs
- 1/2 cup pumpkin puree
- 2 tbs sugar (if you like sweet french toast add more)
- 1/2 tsp cinnamon
- 1/2 cup milk
- 6 slices of thick bread
- butter for pan
- Whisk together all ingredients until well combined and smooth.
- Dip bread in and coast thoroughly. Place in a hot pan and cook until toasted.
- Serve sprinkled with cinnamon sugar.
