Hot Chocolate Peppermint Cookies

For fun in 2016, I want to try to post the recipes I make this year. For my first one I would like to share a little cookie recipe 🙂 Happy New Year!

First semester freshman year at Oberlin, my wonderful friend and I decided that we needed to make Christmas cookies for our teachers as end of semester presents. We were both going home for the month of january and so we didn’t want to buy anymore baking supplies. We had everything we needed…The only problem was we had no chocolate chips and that was what we wanted to make. Instead of going and buying chocolate chips we decided to use our imaginations. haha Izzy came up with peppermint candies and we had hot chocolate powder.Thus this tasty cookie was born. You can use any chocolate chip cookie recipe and just tweak it to become this cookie 🙂 It is just that easy!

My favorite cookie dough recipe right now is this Betty Crocker Chocolate Chip Cookies  one. It is simple and allows me to add things to make different flavors of cookies very easily.

Hot Chocolate Peppermint Cookies

  • Servings: 48
  • Difficulty: easy

INGREDIENTS:

  • 1/4 cup of your favorite instant hot chocolate mix
  • 1 – 1 1/2 cup crushed peppermint candies or 1/2 package Andes Peppermint Crunch baking chips.

DIRECTIONS:

  • Mix up the Betty Crocker cookies exactly as the recipe states but do not add in nuts and chocolate chips.
  • Mix in the above ingredients and then bake as directed by Betty 🙂
